  The physical state of lecithin varies from a viscous semi-solid to a powder state, depending mainly on the content of free fatty acids.
  The color ranges from brown to bright yellow, depending on whether it has been bleached and the degree of purification.
  It oxidizes, discolors and degrades when exposed to heat; degrades at 160-180°C for 24 hours; degrades at extreme pH values and is both hygroscopic and microbially degradable.
  Lecithin in liquid or wax form degrades at room temperature or above, and causes separation below 10°C.
  Store in airtight containers, protected from light and oxygen; purified lecithin should be stored in airtight containers below freezing point.
